Instructions:
Preheat oven to 350°F (175°C).
In a large pot, boil squash and onion in salted water until tender. Drain well.
In a large mixing bowl, combine squash, onion, cheese, sour cream, salt, and pepper.
Pour mixture into a greased baking dish.
In a separate bowl, mix crushed Ritz crackers with melted butter. Sprinkle over the squash mixture.
Bake for 25-30 minutes or until the top is golden brown.
Notes:
For extra flavor, add a pinch of garlic powder to the squash mixture.
