Ingredients:  

Main Ingredients

  • 4 cups sliced yellow squash
  • 1 cup chopped onion
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 cup crushed Ritz crackers
  • 1 stick butter, melted
  • 1 tsp salt
  • 1 tsp black pepper

Instructions: 

  • Preheat oven to 350°F (175°C).
  • In a large pot, boil squash and onion in salted water until tender. Drain well.
  • In a large mixing bowl, combine squash, onion, cheese, sour cream, salt, and pepper.
  • Pour mixture into a greased baking dish.
  • In a separate bowl, mix crushed Ritz crackers with melted butter. Sprinkle over the squash mixture.
  • Bake for 25-30 minutes or until the top is golden brown.

Notes:

For extra flavor, add a pinch of garlic powder to the squash mixture.
