Ingredients:  

Main Ingredients

  • 1 lb ground beef
  • 1 can whole green chilies drained and split open
  • 2 cups shredded cheese cheddar or Monterey Jack
  • 4 eggs beaten
  • 1 cup milk
  • 1/4 cup flour
  • 1 tsp salt
  • 1/2 tsp pepper

Instructions: 

  • Preheat oven to 350°F (175°C).
  • In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  • Layer half of the green chilies in a baking dish. Top with half of the ground beef and half of the cheese. Repeat layers.
  • In a bowl, whisk together the eggs, milk, flour, salt, and pepper. Pour over the layers in the baking dish.
  • Bake in the preheated oven for 45 minutes, or until the casserole is set and the top is golden brown.

Notes:

Let the casserole cool for a few minutes before serving. Serve with a side of salsa or sour cream if desired.
