whole green chilies
drained and split open

cheddar or Monterey Jack

Instructions:
Preheat oven to 350°F (175°C).
In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
Layer half of the green chilies in a baking dish. Top with half of the ground beef and half of the cheese. Repeat layers.
In a bowl, whisk together the eggs, milk, flour, salt, and pepper. Pour over the layers in the baking dish.
Bake in the preheated oven for 45 minutes, or until the casserole is set and the top is golden brown.
Notes:
Let the casserole cool for a few minutes before serving. Serve with a side of salsa or sour cream if desired.
