Ingredients:

  • 2 lbs carrots peeled and chopped
  • 1/2 cup butter melted
  • 3 eggs beaten
  • 1 cup sugar
  • 3 tbsp all-purpose flour
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions: 

  • Preheat oven to 350°F (175°C).
  • Boil carrots in a large pot until tender, about 15 minutes. Drain well.
  • In a blender, combine carrots, butter, eggs, sugar, flour, baking powder, vanilla extract, and salt. Blend until smooth.
  • Pour mixture into a greased baking dish.
  • Bake for 45 minutes, or until the top is golden brown.
