Instructions:
Preheat oven to 350°F (175°C).
Boil carrots in a large pot until tender, about 15 minutes. Drain well.
In a blender, combine carrots, butter, eggs, sugar, flour, baking powder, vanilla extract, and salt. Blend until smooth.
Pour mixture into a greased baking dish.
Bake for 45 minutes, or until the top is golden brown.
