Ingredients:  

Main Ingredients

  • 2 cups Yellow squash, sliced
  • 2 cups Tomatoes, chopped
  • 1 cup Onion, chopped
  • 1 cup Cheddar cheese, shredded
  • 1 cup Breadcrumbs
  • 1 tsp Salt
  • 1 tsp Black pepper

Instructions: 

  • Preheat oven to 350°F (175°C).
  • In a baking dish, layer the yellow squash, tomatoes, and onions.
  • Sprinkle salt and pepper over the vegetables.
  • Top with shredded cheddar cheese and breadcrumbs.
  • Bake in the preheated oven for 30 minutes, or until the top is golden brown and the vegetables are tender.

Notes:

Feel free to add other vegetables like zucchini or bell peppers.
