Instructions:
Preheat oven to 350°F (175°C).
In a skillet, cook ground beef over medium heat until browned. Drain excess fat.
Add taco seasoning and water according to package instructions. Simmer for a few minutes.
In a mixing bowl, combine enchilada sauce and cubed Velveeta cheese.
Layer tortillas, beef mixture, and cheese mixture in a baking dish. Repeat layers.
Bake in preheated oven for 20-30 minutes, until cheese is melted and bubbly.
Notes:
Feel free to add your favorite toppings like sour cream, jalapeños, or cilantro.
