Ingredients:

  • 1 box Uncle Ben's Wild Rice
  • 2 cups Cooked Chicken, diced
  • 1 cup Sour Cream
  • 1 can Cream of Mushroom Soup
  • 1 cup Shredded Cheddar Cheese
  • 1 cup Frozen Peas
  • 1 cup Diced Carrots
  • to taste Salt and Pepper

Instructions: 

  • Preheat your oven to 350°F (175°C).
  • Cook the Uncle Ben's wild rice according to the package instructions.
  • In a large mixing bowl, combine the cooked rice, diced chicken, sour cream, cream of mushroom soup, shredded cheddar cheese, frozen peas, and diced carrots. Mix well.
  • Season with salt and pepper to taste.
  • Transfer the mixture to a baking dish and spread it out evenly.
  • Bake in the preheated oven for 30-35 minutes, or until the casserole is heated through and the top is golden brown.
  • Let it cool for a few minutes before serving.

Notes:

This casserole is great for leftovers and can be easily reheated.
