Instructions:
Preheat your oven to 375°F (190°C).
Cook the quinoa according to package instructions.
In a large mixing bowl, combine the cooked quinoa, shredded turkey, chicken broth, cheddar cheese, frozen peas, diced carrots, garlic powder, and onion powder. Mix well.
Season with salt and pepper to taste.
Transfer the mixture to a baking dish and spread evenly.
Bake in the preheated oven for 30-35 minutes, or until the top is golden and bubbly.
Let it cool for a few minutes before serving.
Notes:
Great for using up leftover turkey. You can substitute chicken if you prefer.
