Ingredients:  

Main Ingredients

  • 1 cup red lentils
  • 2 cups vegetable broth
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 1 tsp cumin
  • 1 tsp paprika
  • to taste salt and pepper

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a saucepan, combine the red lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes until lentils are tender.
  • In a mixing bowl, combine the cooked lentils, chopped onion, minced garlic, diced tomatoes, cumin, and paprika. Mix well.
  • Season with salt and pepper to taste.
  • Transfer the mixture to a casserole dish and bake in the preheated oven for 25-30 minutes until the top is slightly crispy.
  • Serve hot and enjoy!

Notes:

You can add other vegetables like carrots or bell peppers for extra flavor.
