Instructions:
Preheat your oven to 375°F (190°C).
In a saucepan, combine the red lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes until lentils are tender.
In a mixing bowl, combine the cooked lentils, chopped onion, minced garlic, diced tomatoes, cumin, and paprika. Mix well.
Season with salt and pepper to taste.
Transfer the mixture to a casserole dish and bake in the preheated oven for 25-30 minutes until the top is slightly crispy.
Serve hot and enjoy!
Notes:
You can add other vegetables like carrots or bell peppers for extra flavor.
