Instructions:
Preheat your oven to 350°F (175°C).
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened.
Add the ground beef to the skillet and cook until browned. Drain any excess fat.
Stir in the Jamaican jerk seasoning, cooked black beans, corn, and cooked rice. Mix well.
Transfer the mixture to a casserole dish and top with shredded cheddar cheese.
Bake in the preheated oven for 30 minutes, or until the cheese is melted and bubbly.
Let the casserole cool for a few minutes before serving.
Notes:
Feel free to add more vegetables like bell peppers or tomatoes for extra flavor and nutrition.
