Ingredients:

  • 1 lb Ground Beef
  • 1 cup Black Beans cooked
  • 1 cup Corn canned or fresh
  • 1 cup Rice cooked
  • 1 tbsp Jamaican Jerk Seasoning
  • 1 cup Cheddar Cheese shredded
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 tbsp Olive Oil

Instructions: 

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened.
  • Add the ground beef to the skillet and cook until browned. Drain any excess fat.
  • Stir in the Jamaican jerk seasoning, cooked black beans, corn, and cooked rice. Mix well.
  • Transfer the mixture to a casserole dish and top with shredded cheddar cheese.
  • Bake in the preheated oven for 30 minutes, or until the cheese is melted and bubbly.
  • Let the casserole cool for a few minutes before serving.

Notes:

Feel free to add more vegetables like bell peppers or tomatoes for extra flavor and nutrition.
