Instructions:
Preheat oven to 375°F (190°C).
In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
Add taco seasoning to the beef and mix well.
In a large mixing bowl, combine the cooked beef, black beans, corn, salsa, and cooked rice. Mix until well combined.
Transfer the mixture to a baking dish and spread evenly. Top with shredded cheddar cheese.
Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
Let it cool for a few minutes before serving. Enjoy!
Notes:
This casserole can be made ahead and refrigerated. Just bake it when you're ready to eat.
