Ingredients:

  • 1 lb Ground Beef
  • 1 can Black Beans drained and rinsed
  • 1 cup Corn frozen or canned
  • 1 cup Salsa
  • 2 cups Shredded Cheddar Cheese
  • 1 packet Taco Seasoning
  • 1 cup Cooked Rice

Instructions: 

  • Preheat oven to 375°F (190°C).
  • In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
  • Add taco seasoning to the beef and mix well.
  • In a large mixing bowl, combine the cooked beef, black beans, corn, salsa, and cooked rice. Mix until well combined.
  • Transfer the mixture to a baking dish and spread evenly. Top with shredded cheddar cheese.
  • Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  • Let it cool for a few minutes before serving. Enjoy!

Notes:

This casserole can be made ahead and refrigerated. Just bake it when you're ready to eat.
