Instructions:
Preheat your oven to 375°F (190°C).
Boil the potatoes in salted water until tender, about 15 minutes.
Drain the potatoes and mash them in a mixing bowl.
Mix in the heavy cream, melted butter, beaten egg yolks, salt, pepper, and nutmeg until smooth.
Transfer the mixture to a baking dish and bake for 25 minutes or until golden brown on top.
Notes:
For an extra crispy top, you can broil the casserole for the last 5 minutes of baking.
