Instructions:
Preheat your oven to 375°F (190°C).
In a large mixing bowl, combine the cauliflower florets, coconut milk, curry powder, salt, pepper, chopped onions, and minced garlic. Mix well.
Transfer the mixture to a baking dish and spread it out evenly.
Bake in the preheated oven for 45 minutes, or until the cauliflower is tender and the top is golden brown.
Remove from the oven and let it cool for a few minutes before serving.
Notes:
Feel free to add other vegetables like carrots or peas for extra flavor and nutrition.
