Ingredients:  

Main Ingredients

  • 1 head Cauliflower cut into florets
  • 1 cup Coconut Milk
  • 2 tbsp Curry Powder
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 cup Chopped Onions
  • 2 cloves Garlic minced

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, combine the cauliflower florets, coconut milk, curry powder, salt, pepper, chopped onions, and minced garlic. Mix well.
  • Transfer the mixture to a baking dish and spread it out evenly.
  • Bake in the preheated oven for 45 minutes, or until the cauliflower is tender and the top is golden brown.
  • Remove from the oven and let it cool for a few minutes before serving.

Notes:

Feel free to add other vegetables like carrots or peas for extra flavor and nutrition.
