Instructions:
Preheat oven to 375°F (190°C).
Steam or boil cauliflower florets until tender, about 5-7 minutes. Drain and set aside.
In a saucepan, melt butter over medium heat. Stir in flour and cook for 1-2 minutes.
Gradually whisk in milk, cooking until the mixture thickens, about 3-5 minutes.
Remove from heat and stir in 1.5 cups of shredded cheese until melted. Season with salt and pepper.
Combine the cheese sauce with the cauliflower and transfer to a baking dish.
Sprinkle the remaining 0.5 cup of cheese on top.
Bake for 20-25 minutes, until the top is golden and bubbly.
Notes:
Feel free to add some breadcrumbs on top for extra crunch.
