balsamic vinegar

Salt and pepper to taste
Instructions:
Preheat oven to 375°F (190°C).
Rinse quinoa under cold water.
In a pot, bring water to a boil, add quinoa, reduce heat, and simmer for 15 minutes.
In a large bowl, combine cooked quinoa, tomatoes, mozzarella, basil, and garlic.
Drizzle with balsamic vinegar and olive oil, season with salt and pepper.
Transfer mixture to a baking dish and bake for 15 minutes.
Serve warm.
Notes:
Feel free to add more veggies or protein to make it a complete meal.
