Ingredients:  

Main Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cup mozzarella balls, halved
  • 1/4 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • 1/4 cup balsamic vinegar
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions: 

  • Preheat oven to 375°F (190°C).
  • Rinse quinoa under cold water.
  • In a pot, bring water to a boil, add quinoa, reduce heat, and simmer for 15 minutes.
  • In a large bowl, combine cooked quinoa, tomatoes, mozzarella, basil, and garlic.
  • Drizzle with balsamic vinegar and olive oil, season with salt and pepper.
  • Transfer mixture to a baking dish and bake for 15 minutes.
  • Serve warm.

Notes:

Feel free to add more veggies or protein to make it a complete meal.
