Ingredients:  

Main Ingredients

  • 1 medium cabbage, shredded
  • 2 cups cooked chicken, shredded
  • 1 can enchilada sauce 15 oz
  • 1 cup shredded cheese
  • 1 unit onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tbsp olive oil
  • unit Salt and pepper to taste

Instructions: 

  • Preheat oven to 375°F (190°C).
  • In a large skillet, heat olive oil over medium heat. Add onion and garlic, cook until softened.
  • Add shredded cabbage, cumin, chili powder, salt, and pepper. Cook until cabbage is tender.
  • In a baking dish, layer half of the cabbage mixture, then half of the chicken, and half of the enchilada sauce. Repeat layers.
  • Top with shredded cheese.
  • Bake for 20-25 minutes, until cheese is melted and bubbly.

Notes:

Feel free to add more spices or adjust the seasoning to your taste.
