Salt and pepper to taste
Instructions:
Preheat oven to 375°F (190°C).
In a large skillet, heat olive oil over medium heat. Add onion and garlic, cook until softened.
Add shredded cabbage, cumin, chili powder, salt, and pepper. Cook until cabbage is tender.
In a baking dish, layer half of the cabbage mixture, then half of the chicken, and half of the enchilada sauce. Repeat layers.
Top with shredded cheese.
Bake for 20-25 minutes, until cheese is melted and bubbly.
Notes:
Feel free to add more spices or adjust the seasoning to your taste.
