Ingredients:  

Main Ingredients

  • 1 cup barley
  • 2 cups vegetable broth
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 cup chopped onions
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions: 

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine barley, vegetable broth, carrots, celery, onions, salt, and pepper.
  • Transfer the mixture to a baking dish.
  • Cover with foil and bake for 45 minutes, or until the barley is tender.
  • Remove from oven and let it sit for 5 minutes before serving.

Notes:

Feel free to add other vegetables or spices to taste.
