Ingredients:  

Main Ingredients

  • 1 lb ground beef
  • 2 cups zucchini, sliced
  • 1 cup onion, chopped
  • 1 can tomato sauce 15 oz
  • 1 cup shredded cheese
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions: 

  • Preheat oven to 350°F (175°C).
  • In a skillet, cook ground beef over medium heat until browned. Drain excess fat.
  • Add chopped onion to the skillet and cook until soft.
  • Stir in tomato sauce, salt, and pepper. Simmer for 10 minutes.
  • In a baking dish, layer half of the zucchini slices. Pour half of the meat sauce over the zucchini. Repeat layers.
  • Top with shredded cheese.
  • Bake in preheated oven for 30 minutes, or until cheese is bubbly and golden.

Notes:

Let the casserole rest for a few minutes before serving to make it easier to cut and serve.
