Ingredients:  

Main Ingredients

  • 2 lbs Yukon Gold potatoes peeled and cubed
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/4 cup butter melted
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup chopped chives optional

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • Boil the potatoes in salted water until tender, about 15 minutes. Drain and mash.
  • In a mixing bowl, combine mashed potatoes, sour cream, cheddar cheese, melted butter, salt, and pepper. Mix well.
  • Transfer the mixture to a greased baking dish. Bake for 30 minutes or until the top is golden brown.
  • Garnish with chopped chives if desired. Serve warm.

Notes:

This casserole is a great side dish for any meal. You can also add bacon bits for extra flavor.
