Ingredients:  

Main Ingredients

  • 1 lb Ground Beef
  • 1 can Corn drained
  • 1 can Black Beans drained and rinsed
  • 1 cup Salsa
  • 2 cups Shredded Cheese cheddar or Mexican blend
  • 1 package Cornbread Mix prepared according to package instructions

Instructions: 

  • Preheat oven to 375°F (190°C).
  • In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
  • In a mixing bowl, combine cooked beef, corn, black beans, and salsa. Mix well.
  • Transfer the mixture to a baking dish and spread evenly. Top with shredded cheese.
  • Prepare cornbread mix according to package instructions and spread over the beef mixture.
  • Bake in preheated oven for 30-35 minutes, or until cornbread is golden brown and cooked through.
  • Let cool for a few minutes before serving. Enjoy!

Notes:

Feel free to add more vegetables like bell peppers or onions for extra flavor.
