Ingredients:  

Main Ingredients

  • 3 cups Zucchini, sliced
  • 1 cup Cherry tomatoes, halved
  • 1 cup Onion, chopped
  • 2 cloves Garlic, minced
  • 1 cup Vegan cheese, shredded
  • 1 cup Bread crumbs
  • 2 tbsp Olive oil
  • 1 tsp Salt
  • 1 tsp Black pepper

Instructions: 

  • 1. Preheat oven to 375°F (190°C).
  • 2. In a mixing bowl, combine zucchini, cherry tomatoes, onion, and garlic.
  • 3. Add olive oil, salt, and pepper. Mix well.
  • 4. Transfer the mixture to a baking dish. Top with vegan cheese and bread crumbs.
  • 5. Bake for 45 minutes or until golden brown.
  • 6. Let it cool for a few minutes before serving.

This casserole is perfect for a healthy dinner.
