Instructions:
1. Preheat oven to 375°F (190°C).
2. In a mixing bowl, combine zucchini, cherry tomatoes, onion, and garlic.
3. Add olive oil, salt, and pepper. Mix well.
4. Transfer the mixture to a baking dish. Top with vegan cheese and bread crumbs.
5. Bake for 45 minutes or until golden brown.
6. Let it cool for a few minutes before serving.
