Ingredients:  

Main Ingredients

  • 12 pieces Frozen taquitos beef or chicken
  • 2 cups Shredded cheese cheddar or Mexican blend
  • 1 cup Salsa
  • 1 cup Sour cream
  • 1 can Black beans drained and rinsed
  • 1 can Corn drained
  • 1 tbsp Olive oil

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • Lightly grease a baking dish with olive oil.
  • Arrange the frozen taquitos in the baking dish.
  • Spread the black beans and corn evenly over the taquitos.
  • Pour the salsa over the top.
  • Sprinkle the shredded cheese over the salsa.
  • Bake in the preheated oven for 25-30 minutes, until the cheese is melted and bubbly.
  • Remove from the oven and let it cool for a few minutes before serving.
  • Serve with sour cream on the side.

Notes:

This casserole is a great way to use up leftover taquitos. Customize with your favorite toppings!
