Ingredients:

  • 1 box Spanish Rice-a-Roni
  • 1 lb ground beef
  • 1 cup shredded cheese
  • 1 can diced tomatoes
  • 1 cup water

Instructions: 

  • Preheat your oven to 350°F (175°C).
  • In a skillet, cook the ground beef until browned. Drain any excess fat.
  • Prepare the Spanish Rice-a-Roni according to the package instructions, using the water and diced tomatoes.
  • In a baking dish, combine the cooked ground beef, prepared Spanish Rice-a-Roni, and half of the shredded cheese.
  • Top with the remaining shredded cheese.
  • Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
  • Serve hot and enjoy!

Notes:

This casserole is a great make-ahead meal. You can prepare it up to the baking step and refrigerate it until you're ready to bake.
