Instructions:
Preheat your oven to 350°F (175°C).
In a skillet, cook the ground beef until browned. Drain any excess fat.
Prepare the Spanish Rice-a-Roni according to the package instructions, using the water and diced tomatoes.
In a baking dish, combine the cooked ground beef, prepared Spanish Rice-a-Roni, and half of the shredded cheese.
Top with the remaining shredded cheese.
Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
Serve hot and enjoy!
Notes:
This casserole is a great make-ahead meal. You can prepare it up to the baking step and refrigerate it until you're ready to bake.
