Ingredients:  

Main Ingredients

  • 1 cup quinoa rinsed
  • 1 lb ground beef
  • 1 cup shredded cheese cheddar or your choice
  • 1 can diced tomatoes 14.5 oz can
  • 1 cup corn frozen or canned
  • 1 cup black beans drained and rinsed
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions: 

  • 1. Preheat your oven to 375°F (190°C).
  • 2. Cook the quinoa according to package instructions.
  • 3. In a skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  • 4. Add the chopped onion and minced garlic to the skillet. Cook until the onion is translucent.
  • 5. Stir in the diced tomatoes, corn, black beans, chili powder, cumin, salt, and black pepper. Let it simmer for a few minutes.
  • 6. In a large mixing bowl, combine the cooked quinoa and the beef mixture. Mix well.
  • 7. Transfer the mixture to a baking dish. Sprinkle the shredded cheese on top.
  • 8. Bake in the preheated oven for about 20 minutes, or until the cheese is melted and bubbly.
  • 9. Let it cool for a few minutes before serving. Enjoy!

Notes:

Feel free to add more veggies like bell peppers or spinach for extra nutrition.
