drained and rinsed

Instructions:
1. Preheat your oven to 375°F (190°C).
2. Cook the quinoa according to package instructions.
3. In a skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
4. Add the chopped onion and minced garlic to the skillet. Cook until the onion is translucent.
5. Stir in the diced tomatoes, corn, black beans, chili powder, cumin, salt, and black pepper. Let it simmer for a few minutes.
6. In a large mixing bowl, combine the cooked quinoa and the beef mixture. Mix well.
7. Transfer the mixture to a baking dish. Sprinkle the shredded cheese on top.
8. Bake in the preheated oven for about 20 minutes, or until the cheese is melted and bubbly.
9. Let it cool for a few minutes before serving. Enjoy!
Notes:
Feel free to add more veggies like bell peppers or spinach for extra nutrition.
