Ingredients:  

Main Ingredients

  • 1 lb Ground beef
  • 1 packet Taco seasoning
  • 1 can Black beans, drained and rinsed
  • 1 can Corn, drained
  • 2 cups Shredded cheese
  • 6 large Flour tortillas
  • 1 cup Salsa

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  • Add the taco seasoning to the beef and stir to combine.
  • In a mixing bowl, combine the cooked beef, black beans, corn, and 1 cup of shredded cheese.
  • In a baking dish, layer 3 tortillas on the bottom. Spread half of the beef mixture over the tortillas. Repeat with another layer of tortillas and the remaining beef mixture.
  • Top with the remaining tortillas, salsa, and the rest of the shredded cheese.
  • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  • Let the casserole cool for a few minutes before slicing and serving.

Notes:

You can customize this casserole by adding your favorite toppings like sour cream, guacamole, or jalapeños.
