Ingredients:

  • 12 oz spaghetti
  • 1 lb ground beef
  • 1 can diced tomatoes with green chilies (10 oz)
  • 1 can black beans drained and rinsed (15 oz)
  • 1 cup corn kernels frozen or canned
  • 1 packet taco seasoning
  • 2 cups shredded cheddar cheese divided
  • 1 cup sour cream

Instructions: 

  • Preheat your oven to 350°F (175°C).
  • Cook the spaghetti according to the package instructions. Drain and set aside.
  • In a large pot, cook the ground beef over medium heat until browned. Drain any excess fat.
  • Add the diced tomatoes, black beans, corn, and taco seasoning to the pot. Stir to combine and cook for 5 minutes.
  • Stir in the cooked spaghetti, 1 cup of shredded cheddar cheese, and sour cream. Mix well.
  • Transfer the mixture to a baking dish and top with the remaining 1 cup of shredded cheddar cheese.
  • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and let it cool for a few minutes before serving.

Notes:

This casserole can be made ahead and refrigerated. Just bake it when you're ready to eat.
