Instructions:
Preheat your oven to 375°F (190°C).
Steam or boil the cauliflower florets until tender, about 10 minutes. Drain well.
In a large mixing bowl, mash the cauliflower until smooth.
Stir in the cheddar cheese, sour cream, green onions, bacon, and garlic. Season with salt and pepper to taste.
Transfer the mixture to a baking dish and spread evenly.
Bake in the preheated oven for 20 minutes, or until the top is golden and bubbly.
Serve hot and enjoy!

This casserole can be made ahead of time and refrigerated until ready to bake.
