In a large mixing bowl, combine the cooked chicken, cooked rice, frozen mixed vegetables, cream of chicken soup, and half of the shredded cheddar cheese.
Season with salt and black pepper, and mix well.
Transfer the mixture to a baking dish and spread it out evenly.
Sprinkle the remaining shredded cheddar cheese on top.
Bake in the preheated oven for 30-35 minutes, or until the cheese is melted and bubbly.
Let it cool for a few minutes before serving.
