Ingredients:

  • 2 cups Cooked Rice
  • 1 cup Crumbled Feta Cheese
  • 1 cup Chopped Spinach fresh or frozen
  • 1 cup Diced Tomatoes canned or fresh
  • 1 tsp Dried Oregano
  • 1 tsp Salt
  • 1/2 tsp Black Pepper

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, combine the cooked rice, crumbled feta cheese, chopped spinach, diced tomatoes, dried oregano, salt, and black pepper.
  • Transfer the mixture into a baking dish and spread it out evenly.
  • Bake in the preheated oven for 45 minutes, or until the top is golden and the casserole is heated through.
  • Let it cool for a few minutes before serving. Enjoy!

This casserole is great for meal prep and can be stored in the fridge for up to 3 days.
