Instructions:
Preheat your oven to 375°F (190°C).
In a skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
Add the taco seasoning and salsa to the beef. Stir well to combine.
In a mixing bowl, combine the black beans, corn, and beef mixture.
Spread a layer of crushed tortilla chips on the bottom of a baking dish.
Layer the beef mixture over the chips, then top with dairy-free cheese.
Bake in the preheated oven for 20-25 minutes, until the cheese is melted and bubbly.
Remove from the oven and let it cool for a few minutes before serving.
Notes:
Feel free to add your favorite toppings like avocado, jalapeños, or fresh cilantro.
