Salt and Pepper
Instructions:
Preheat oven to 375°F (190°C).
In a mixing bowl, combine cauliflower florets, quinoa, vegetable broth, garlic powder, onion powder, salt, and pepper.
Transfer mixture to a baking dish and cover with foil.
Bake for 25 minutes, then remove foil and sprinkle shredded cheddar cheese on top.
Bake for an additional 5 minutes, or until cheese is melted and bubbly.
Let cool for a few minutes before serving.
Notes:
This casserole is perfect for a healthy weeknight dinner.
