Ingredients:  

Main Ingredients

  • 1 head Cauliflower cut into florets
  • 1 cup Quinoa rinsed
  • 2 cups Vegetable Broth
  • 1 cup Cheddar Cheese shredded
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • to taste Salt and Pepper

Instructions: 

  • Preheat oven to 375°F (190°C).
  • In a mixing bowl, combine cauliflower florets, quinoa, vegetable broth, garlic powder, onion powder, salt, and pepper.
  • Transfer mixture to a baking dish and cover with foil.
  • Bake for 25 minutes, then remove foil and sprinkle shredded cheddar cheese on top.
  • Bake for an additional 5 minutes, or until cheese is melted and bubbly.
  • Let cool for a few minutes before serving.

Notes:

This casserole is perfect for a healthy weeknight dinner.
