Ingredients:

  • 1 large butternut squash peeled and cubed
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp nutmeg
  • 2 tbsp butter melted

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, combine the butternut squash, heavy cream, Parmesan cheese, salt, black pepper, and nutmeg.
  • Transfer the mixture to a greased baking dish.
  • Drizzle the melted butter over the top.
  • Bake in the preheated oven for 40 minutes, or until the squash is tender and the top is golden brown.
  • Let it cool for a few minutes before serving.

Notes:

This casserole can be made ahead and reheated. Perfect for meal prep!
