Ingredients:  

Main Ingredients

  • 4 cups zucchini, sliced
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 4 large eggs
  • 1 cup milk
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp dried basil
  • 0.5 tsp dried oregano
  • 2 cups bread cubes

Instructions: 

  • Preheat oven to 375°F (190°C).
  • In a large skillet, sauté zucchini, onion, and garlic until tender.
  • In a large bowl, whisk together eggs, milk, salt, pepper, basil, and oregano.
  • Add bread cubes, sautéed vegetables, and cheeses to the bowl. Mix well.
  • Pour mixture into a greased baking dish.
  • Bake for 45 minutes or until set and golden brown.

Notes:

Let the casserole cool for a few minutes before serving.
