Ingredients:

  • 1 lb Ground Beef
  • 1 cup Chopped Bell Peppers Mixed colors
  • 1 cup Chopped Onions
  • 2 cloves Garlic Minced
  • 1 can Black Beans Drained and rinsed
  • 1 cup Corn Kernels Fresh or frozen
  • 1 cup Shredded Cheddar Cheese
  • 1 cup Salsa
  • 1 tsp Ground Cumin
  • 1 tsp Chili Powder
  • to taste Salt and Pepper

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  • Add the chopped bell peppers, onions, and minced garlic to the skillet. Cook until the vegetables are tender.
  • Stir in the black beans, corn kernels, salsa, ground cumin, chili powder, salt, and pepper. Mix well.
  • Transfer the mixture to a baking dish. Top with shredded cheddar cheese.
  • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  • Let it cool for a few minutes before serving. Enjoy!
