Ingredients:  

Main Ingredients

  • 1 lb Ground beef
  • 1 can Black beans drained and rinsed
  • 1 can Corn drained
  • 1 packet Taco seasoning
  • 1 cup Salsa
  • 2 cups Shredded cheese Mexican blend
  • 1 can Refrigerated biscuit dough cut into quarters

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  • Add the black beans, corn, taco seasoning, and salsa to the skillet. Stir to combine and cook for 5 minutes.
  • Transfer the mixture to a greased baking dish. Sprinkle the shredded cheese evenly over the top.
  • Place the biscuit dough quarters on top of the cheese layer.
  • Bake in the preheated oven for 25-30 minutes, or until the biscuits are golden brown and cooked through.
  • Let the casserole cool for a few minutes before serving. Enjoy!

Notes:

This casserole is great for leftovers and can be stored in the fridge for up to 3 days.
