Ingredients:  

Main Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 can enchilada sauce
  • 10 pieces corn tortillas
  • 2 cups shredded cheese
  • 1 can black beans optional
  • 1 can corn optional

Instructions: 

  • Preheat oven to 375°F (190°C).
  • Brown the ground beef in a skillet over medium heat.
  • Add taco seasoning and cook according to package instructions.
  • Stir in enchilada sauce, black beans, and corn.
  • Cut tortillas into quarters.
  • Layer half the tortillas in a baking dish.
  • Pour half the beef mixture over the tortillas.
  • Sprinkle with 1 cup of cheese.
  • Repeat layers.
  • Bake for 20-25 minutes until cheese is melted and bubbly.

Notes:

Feel free to add any other toppings you like, such as sour cream or guacamole.
