Instructions:
Preheat oven to 375°F (190°C).
Brown the ground beef in a skillet over medium heat.
Add taco seasoning and cook according to package instructions.
Stir in enchilada sauce, black beans, and corn.
Cut tortillas into quarters.
Layer half the tortillas in a baking dish.
Pour half the beef mixture over the tortillas.
Sprinkle with 1 cup of cheese.
Repeat layers.
Bake for 20-25 minutes until cheese is melted and bubbly.
Notes:
Feel free to add any other toppings you like, such as sour cream or guacamole.
