Impossible Meat

onion, chopped

garlic, minced

bell pepper, chopped

diced tomatoes

corn

black beans, drained and rinsed

cup
shredded cheese

chili powder

cumin
Salt and pepper to taste
Instructions:
Preheat oven to 375°F (190°C).
In a large skillet, cook Impossible Meat over medium heat until browned.
Add onion, garlic, and bell pepper. Cook until softened.
Stir in diced tomatoes, corn, black beans, chili powder, cumin, salt, and pepper. Simmer for 10 minutes.
Transfer mixture to a casserole dish. Top with shredded cheese.
Bake in preheated oven for 20 minutes, until cheese is melted and bubbly.
Notes:
Feel free to add more veggies or spices to suit your taste.
