Ingredients:  

Main Ingredients

  • 1 lb Impossible Meat
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can diced tomatoes
  • 1 cup corn
  • 1 cup black beans, drained and rinsed
  • 1 cup shredded cheese
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions: 

  • Preheat oven to 375°F (190°C).
  • In a large skillet, cook Impossible Meat over medium heat until browned.
  • Add onion, garlic, and bell pepper. Cook until softened.
  • Stir in diced tomatoes, corn, black beans, chili powder, cumin, salt, and pepper. Simmer for 10 minutes.
  • Transfer mixture to a casserole dish. Top with shredded cheese.
  • Bake in preheated oven for 20 minutes, until cheese is melted and bubbly.

Notes:

Feel free to add more veggies or spices to suit your taste.
