Instructions:
Preheat your oven to 375°F (190°C).
In a mixing bowl, combine diced potatoes, onions, bell peppers, and shredded cheese.
In a small saucepan, melt the butter and mix in the milk. Pour this mixture over the potato mixture and stir well.
Season with salt and pepper to taste.
Transfer the mixture to a greased baking dish.
Bake in the preheated oven for 45 minutes or until the top is golden brown and the potatoes are tender.
Let it cool for a few minutes before serving.
Notes:
Feel free to add some cooked bacon or sausage for extra flavor.
