Ingredients:  

Main Ingredients

  • 1 large eggplant sliced
  • 1 lb ground turkey
  • 1 cup tomato sauce
  • 1 cup shredded mozzarella cheese
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 clove garlic minced
  • 1 tbsp olive oil
  • to taste salt and pepper

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • Slice the eggplant into 1/4 inch thick rounds. Sprinkle with salt and let sit for 10 minutes to draw out moisture. Pat dry.
  • In a skillet, heat olive oil over medium heat. Add minced garlic and cook until fragrant. Add ground turkey and cook until browned.
  • Add tomato sauce, dried oregano, and dried basil to the skillet. Stir to combine and let simmer for 5 minutes. Season with salt and pepper to taste.
  • In a baking dish, layer half of the eggplant slices. Spread half of the turkey mixture over the eggplant. Repeat layers.
  • Top with shredded mozzarella cheese.
  • Bake in the preheated oven for 30-35 minutes, until the cheese is bubbly and golden brown.
  • Let cool for a few minutes before serving.

Notes:

Feel free to add more veggies like bell peppers or zucchini.
