shredded cheese
cheddar or Mexican blend

black beans
drained and rinsed

cup
corn kernels
frozen or canned
1
cup
salsa
1
tsp
ground cumin
1
tsp
chili powder
1
cup
sour cream
optional, for serving
Instructions:
Preheat oven to 375°F (190°C).
In a mixing bowl, combine black beans, corn, salsa, cumin, and chili powder.
In a baking dish, layer 2 tortillas, 1/3 of the bean mixture, and 1/3 of the shredded cheese. Repeat layers ending with cheese on top.
Bake in preheated oven for 30 minutes or until cheese is melted and bubbly.
Let cool for a few minutes before serving. Top with sour cream if desired.
Notes:
This casserole can be made ahead and refrigerated. Just bake it when you're ready to eat.
