Vegetarian Tortilla Casserole

Ingredients:  

Main Ingredients

  • 6 large flour tortillas
  • 2 cups shredded cheese cheddar or Mexican blend
  • 1 can black beans drained and rinsed
  • 1 cup corn kernels frozen or canned
  • 1 cup salsa
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 cup sour cream optional, for serving

Instructions: 

  • Preheat oven to 375°F (190°C).
  • In a mixing bowl, combine black beans, corn, salsa, cumin, and chili powder.
  • In a baking dish, layer 2 tortillas, 1/3 of the bean mixture, and 1/3 of the shredded cheese. Repeat layers ending with cheese on top.
  • Bake in preheated oven for 30 minutes or until cheese is melted and bubbly.
  • Let cool for a few minutes before serving. Top with sour cream if desired.

Notes:

This casserole can be made ahead and refrigerated. Just bake it when you're ready to eat.
