Ingredients:  

Main Ingredients

  • 1 lb Ground Beef
  • 1 cup Onion, chopped
  • 2 cloves Garlic, minced
  • 1 packet Taco Seasoning
  • 1 head Cauliflower, riced
  • 1 cup Shredded Cheddar Cheese
  • 1 cup Salsa
  • 1 cup Black Beans, drained and rinsed

Instructions: 

  • Preheat oven to 375°F (190°C).
  • In a skillet, cook ground beef over medium heat until browned. Drain excess fat.
  • Add chopped onion and minced garlic to the skillet. Cook until softened.
  • Stir in taco seasoning and cauliflower rice. Cook for 5 minutes.
  • Transfer mixture to a baking dish. Top with shredded cheddar cheese, salsa, and black beans.
  • Bake in preheated oven for 20 minutes, until cheese is melted and bubbly.
  • Serve hot and enjoy!

Notes:

Feel free to add your favorite taco toppings like sour cream, avocado, or jalapeños.
