Instructions:
Preheat your oven to 375°F (190°C).
Cook the rice noodles according to package instructions. Drain and set aside.
In a mixing bowl, combine the vegetable broth, soy sauce, garlic powder, and onion powder.
In a baking dish, layer the cooked rice noodles and mixed vegetables.
Pour the broth mixture over the noodles and vegetables. Drizzle with olive oil.
Bake in the preheated oven for 30 minutes, or until the top is golden and crispy.
Remove from the oven and let it cool for a few minutes before serving.
