Ingredients:  

Main Ingredients

  • 200 g Rice Noodles
  • 1 cup Vegetable Broth
  • 1 cup Mixed Vegetables chopped
  • 1 tbsp Soy Sauce
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tbsp Olive Oil

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • Cook the rice noodles according to package instructions. Drain and set aside.
  • In a mixing bowl, combine the vegetable broth, soy sauce, garlic powder, and onion powder.
  • In a baking dish, layer the cooked rice noodles and mixed vegetables.
  • Pour the broth mixture over the noodles and vegetables. Drizzle with olive oil.
  • Bake in the preheated oven for 30 minutes, or until the top is golden and crispy.
  • Remove from the oven and let it cool for a few minutes before serving.

Notes:

Feel free to add your favorite vegetables or protein to this casserole.
