Instructions:
Preheat oven to 375°F (190°C).
In a skillet, cook ground beef until browned. Add chopped onion and minced garlic, cook until softened.
Add tomato sauce, salt, and pepper to the skillet. Simmer for 10 minutes.
In a baking dish, layer half of the sliced eggplant, then half of the beef mixture. Repeat layers.
Top with shredded mozzarella cheese.
Bake in preheated oven for 30-40 minutes, until eggplant is tender and cheese is bubbly.
Notes:
Let the casserole rest for a few minutes before serving.
