Ingredients:  

Main Ingredients

  • 1 large eggplant sliced
  • 1 lb ground beef
  • 1 cup onion chopped
  • 2 cloves garlic minced
  • 1 can tomato sauce (15 oz)
  • 1 cup mozzarella cheese shredded
  • 1 tsp salt
  • 0.5 tsp black pepper

Instructions: 

  • Preheat oven to 375°F (190°C).
  • In a skillet, cook ground beef until browned. Add chopped onion and minced garlic, cook until softened.
  • Add tomato sauce, salt, and pepper to the skillet. Simmer for 10 minutes.
  • In a baking dish, layer half of the sliced eggplant, then half of the beef mixture. Repeat layers.
  • Top with shredded mozzarella cheese.
  • Bake in preheated oven for 30-40 minutes, until eggplant is tender and cheese is bubbly.

Notes:

Let the casserole rest for a few minutes before serving.
