Instructions:
Preheat your oven to 375°F (190°C).
In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
Add the chopped onions and minced garlic to the skillet. Cook until onions are translucent.
Stir in the diced tomatoes, salt, and black pepper. Let it simmer for 5 minutes.
In a large mixing bowl, combine the cooked rice and the beef mixture. Mix well.
Transfer the mixture to a baking dish. Top with shredded cheddar cheese.
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
Let it cool for a few minutes before serving. Enjoy!

Feel free to add other vegetables like bell peppers or corn for extra flavor.
