Ingredients:

  • 1 lb ground beef
  • 1 head cauliflower cut into florets
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • to taste salt and pepper

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  • Steam or boil the cauliflower florets until tender, about 5-7 minutes. Drain well.
  • In a large mixing bowl, combine the cooked ground beef, cauliflower, shredded cheddar cheese, sour cream, garlic powder, onion powder, salt, and pepper. Mix well.
  • Transfer the mixture to a baking dish and spread it out evenly.
  • Bake in the preheated oven for 20-25 minutes, until the top is golden and bubbly.
  • Let it cool for a few minutes before serving. Enjoy!

This casserole is great for meal prep and can be stored in the fridge for up to 3 days.
