In a mixing bowl, combine cooked quinoa, chopped bell peppers, chopped zucchini, chopped tomatoes, and shredded cheese.
Add salt, black pepper, and olive oil. Mix well.
Transfer the mixture to a baking dish and spread evenly.
Bake in the preheated oven for 40 minutes, or until the top is golden brown.
Let it cool for a few minutes before serving.
