Ingredients:

  • 2 cups Cooked Quinoa
  • 1 cup Chopped Bell Peppers
  • 1 cup Chopped Zucchini
  • 1 cup Chopped Tomatoes
  • 1 cup Shredded Cheese
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1 tbsp Olive Oil

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a mixing bowl, combine cooked quinoa, chopped bell peppers, chopped zucchini, chopped tomatoes, and shredded cheese.
  • Add salt, black pepper, and olive oil. Mix well.
  • Transfer the mixture to a baking dish and spread evenly.
  • Bake in the preheated oven for 40 minutes, or until the top is golden brown.
  • Let it cool for a few minutes before serving.

This casserole can be stored in the refrigerator for up to 3 days.
