Cook the egg noodles according to the package instructions. Drain and set aside.
In a large mixing bowl, combine the cooked noodles, broccoli, carrots, mushrooms, cheddar cheese, cream of mushroom soup, milk, salt, and pepper. Mix well.
Transfer the mixture to a greased baking dish.
Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.

You can add other vegetables like peas or bell peppers for more variety.
