Instructions:
Preheat your oven to 400°F (200°C).
In a saucepan, heat the olive oil over medium heat. Add the onions and cook until translucent.
Add the diced potatoes and mixed vegetables. Cook for about 5 minutes.
Sprinkle the flour over the vegetables and stir well to coat.
Gradually add the vegetable broth, stirring constantly until the mixture thickens.
Season with salt and pepper. Pour the mixture into a baking dish.
Cover with the vegan puff pastry, trimming any excess. Cut a few slits in the top to allow steam to escape.
Bake for 30-35 minutes, or until the pastry is golden brown.
Let it cool for a few minutes before serving. Enjoy!
