Ingredients:  

Main Ingredients

  • 2 cups Mixed Vegetables (carrots, peas, corn)
  • 1 cup Diced Potatoes
  • 1 cup Diced Onions
  • 2 tbsp Olive Oil
  • 3 cups Vegetable Broth
  • 1/4 cup All-Purpose Flour
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 sheet Vegan Puff Pastry

Instructions: 

  • Preheat your oven to 400°F (200°C).
  • In a saucepan, heat the olive oil over medium heat. Add the onions and cook until translucent.
  • Add the diced potatoes and mixed vegetables. Cook for about 5 minutes.
  • Sprinkle the flour over the vegetables and stir well to coat.
  • Gradually add the vegetable broth, stirring constantly until the mixture thickens.
  • Season with salt and pepper. Pour the mixture into a baking dish.
  • Cover with the vegan puff pastry, trimming any excess. Cut a few slits in the top to allow steam to escape.
  • Bake for 30-35 minutes, or until the pastry is golden brown.
  • Let it cool for a few minutes before serving. Enjoy!
