cheddar or Mexican blend

black beans
drained and rinsed

corn kernels
frozen or canned

salsa
1
tsp
cumin

tsp
chili powder

diced tomatoes

Instructions:
Preheat your oven to 375°F (190°C).
In a mixing bowl, combine black beans, corn, salsa, cumin, and chili powder.
Layer 2 tortillas at the bottom of a baking dish.
Spread a third of the bean mixture over the tortillas, then sprinkle with cheese.
Repeat layers twice more, ending with a layer of cheese on top.
Bake for 30 minutes, or until the cheese is bubbly and golden.
Let it cool for a few minutes before serving.
Notes:
Feel free to add any extra veggies you like, such as bell peppers or onions.
