Ingredients:  

Main Ingredients

  • 6 large tortillas
  • 2 cups shredded cheese cheddar or Mexican blend
  • 1 can black beans drained and rinsed
  • 1 cup corn kernels frozen or canned
  • 1 cup salsa
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 cup diced tomatoes optional

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a mixing bowl, combine black beans, corn, salsa, cumin, and chili powder.
  • Layer 2 tortillas at the bottom of a baking dish.
  • Spread a third of the bean mixture over the tortillas, then sprinkle with cheese.
  • Repeat layers twice more, ending with a layer of cheese on top.
  • Bake for 30 minutes, or until the cheese is bubbly and golden.
  • Let it cool for a few minutes before serving.

Notes:

Feel free to add any extra veggies you like, such as bell peppers or onions.
