Rice

Potatoes, thinly sliced

Mussels, cleaned

Cherry tomatoes, halved

Onion, thinly sliced

Pecorino cheese, grated

Olive oil
to taste
Salt and pepper
Instructions:
Preheat your oven to 375°F (190°C).
In a casserole dish, layer half of the potatoes, followed by half of the onions, tomatoes, and mussels.
Sprinkle with half of the rice and half of the grated cheese. Drizzle with olive oil, and season with salt and pepper.
Repeat the layers with the remaining ingredients.
Pour water into the dish until it just covers the top layer.
Cover the dish with foil and bake for 45 minutes. Remove the foil and bake for an additional 15 minutes, or until the top is golden brown.
Let it rest for 10 minutes before serving.
Notes:
This dish is best enjoyed fresh out of the oven. Feel free to add other seafood or vegetables as you like.
