Tiella Pugliese Casserole Recipe

Ingredients:  

Main Ingredients

  • 2 cups Rice
  • 4 cups Potatoes, thinly sliced
  • 2 cups Mussels, cleaned
  • 1 cup Cherry tomatoes, halved
  • 1 cup Onion, thinly sliced
  • 1 cup Pecorino cheese, grated
  • 2 tbsp Olive oil
  • to taste Salt and pepper

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a casserole dish, layer half of the potatoes, followed by half of the onions, tomatoes, and mussels.
  • Sprinkle with half of the rice and half of the grated cheese. Drizzle with olive oil, and season with salt and pepper.
  • Repeat the layers with the remaining ingredients.
  • Pour water into the dish until it just covers the top layer.
  • Cover the dish with foil and bake for 45 minutes. Remove the foil and bake for an additional 15 minutes, or until the top is golden brown.
  • Let it rest for 10 minutes before serving.

Notes:

This dish is best enjoyed fresh out of the oven. Feel free to add other seafood or vegetables as you like.
