In a skillet, heat olive oil over medium heat. Add chopped onion and cook until translucent.
Add ground beef to the skillet and cook until browned. Drain any excess fat.
Stir in the cream of mushroom soup and cream of chicken soup. Mix well.
Transfer the beef mixture to a baking dish. Top with an even layer of tater tots.
Bake in the preheated oven for 30 minutes.
Remove from oven and sprinkle shredded cheddar cheese on top. Return to oven and bake for an additional 15 minutes, or until cheese is melted and bubbly.
Let the casserole cool for a few minutes before serving. Enjoy!
